Dissolve the yeast in the warm water. Add the sugar and the salt. Gradually add the flour and then knead for 7-9 minutes. Cover and let the dough rise until it doubles. Punch it down and cut into 12 pieces. Roll into ropes and form into pretzels. Put onto a greased baking sheet, brush with the egg, and sprinkle with the coarse salt.
